Add anything fairy cakes


Everyone has slightly different ways of making fairy cakes, here is how I make them with a little twist.

Basic fairy cakes

This is the recipe for basic fairy cakes, if you want to make them the ‘Add anything’ version follow this recipe until the *
Ingredients
4oz Flora or butter (I prefere flora)
4oz Caster sugar
2 Eggs
4oz Self Raising flour

Cream butter and sugar together until pale and fluffy.
Beat in the eggs, one at a time, adding flour with each.
Fold in the rest of flour and mix. *
Spoon into 12 little cases and bake at 180c for about 20 minutes.
When cooled ice and decorate.


Add anything cakes

*You can have fun now and add in pretty much what very you like to this mixture, but whatever else you may add always put in ½ tsp of mixed spice to.

Here are some things we have tried:

A handful of sultanas or raisins
A handful of chopped dried fruit, cranberries work well
A handful of chocolate drops, milk, dark or white
A handful of chopped glacier cherries
A handful of chopped pecan nuts (use your own common sense when using nuts)

Our favourite combination is ½ tsp of mixed spice, sultanas, milk chocolate drops and chopped cherries.

If you made the ‘add anything’ version, then spoon the mixture into about 6-8 muffin size cases and bake at 180c for about 20 to 25 minutes.
You can ice them, using simple icing sugar and water.
